This summer I’ve had a new (to me) problem in training. Cramps. Mostly in my calves. They are pretty much constantly on the verge of charlie horsing…and Tuesday’s longish ride was no exception. A big part of this is my crappy job keeping up with electrolyte replacement. A big part of this is also that it was one-million degrees and I sweat like a pig (sidenote: a co-worker’s husband saw me running on the treadmill last Sunday and remarked to my coworker that I sweat an abnormal amount. lovely).
Anyway, the whole time I was riding and hot and sweaty and cramping, I fantasized about bananas. Wonderful potassium to heal my ailing calves.
By the time I got home, I was drooling thinking about the creation I was about to make for dinner. And that creation was Bananas Foster Cottage Cheese Pancakes.
Ingredients:
1. Combine cottage cheese, eggs, milk, oil and stir until combined
2. Mix in dry ingredients (minus the brown sugar and cinnamon) and two sliced bananas
3. Plop some of the batter on the griddle.
4. When little bubbles begin to appear on top, flip pancake and allow to cook through.
4. In a saucepan, melt butter.
6. Add cinnamon and brown sugar
7. Allow the sugar and cinnamon to dissolve, and add the last sliced banana, vanilla, and a cup of water. Cook until a syruppy consistency has been reached.
8. Top pancake with syrup.
9. Eat.
10. Lick plate.

wow. i actually kind of like feeling my calves twitch and almost cramp up (yes i’m weird) but i might have to have these pancakes even if they make my calves stop haha

My feet tend to cramp, and it always happens when my husband and I are having “special alone time”. Really ruins the mood when I yell and have to start pulling on my toes.
I’m currently very hungry and too lazy to cook anything even remotely ambitious (…read: foods that don’t involve opening a can/using the microwave) so looking at these pictures is making me fantastically jealous. YUUUUM. That looks to be about the best cramp remedy there is.
It cracked me up that they actually commented on how you sweat a crazy amount… I’m usually pretty nast by the time everything is said and done, too. When I get looks, I just want to be like, “what?! You go run for an hour and tell me what you look like after…” I never actually do, but smirk to myself as I think about it.
Oh my goodness, what a yummy way to relieve the crampiness! These pancakes look wonderful!!!!!! Oh and don’t worry, I’m pretty sure I’d beat you in a sweating contest!! I get it from my dad!!

I’ve had the same cramping problem all summer. Annoying heat and humidity. I’ve had to down salt to remedy the problem. Gross.
Wow. I’ve had this in a restaurant but yours looks so much more amazing!! This would definitely be something I’d opt for on the weekends, especially after a late night or a long run!
Have you ever tried compression sleeves for your calves? I used to have crazy problems with cramping and shin splints and since I purchased sleeves from Zensah, the problem is gone!
I was low in potassium last summer and learned that bananas aren’t even in the top foods that are high in potassium. I mean, they are better than some and are certainly up there, but legumes and sweet potatoes are what I remember being the best.
My calves get super crampy too. those pancakes look amazing!

I cramp up sometimes. Can I have pancakes, too? I am so impressed that you make yourself pretty much gourmet meals. When I cook for my lonesome, let’s just say we’re not having bananas foster pancakes. And don’t ask why I referred to myself as “we.”

I HATE those cramps. They hurt soooo bad and just won’t release sometimes.
