becoming a happy adult in a sunny sustainable world.
And finally, another installment of my Cupcake project!
This cupcake was made for a coworker’s going away part at the end of April…clearly they weren’t great as I’ve been procrastinating posting about them since then. But, anyway, here we go…Red Velvet.
Cocoa powder and flour.
And then the red dye gets added in…a whole bottle of red dye.
I’m BLEeeeeeeeeeEDING! j/k…just batter.
Baking soda and vinegar fizzies.
The not so greatness of these cupcakes was, perhaps, my fault. I may have been distracted while making them. And I may have accidentally added a 1 cup of buttermilk instead of 1/2 cup. I may have then tried to compensate by added more flour, sugar, and cocoa. This may have resulted in tasteless and bland cupcakes.
The icing was rockin’ though.

Ok…now to kick myself out the door for a long run. I’ll be back after 14 miles.
And, I have ANOTHER cupcake to post too. A DEEEEELISH one, too. Prepare your drooling.

Cream cheese frosting makes everything better! I made a red velvet cake last night
i have to disagree about the coloring. granted i’ve never had red velvet anything but that bright fake red is somehow so great looking to me. maybe i’m weird haha!
enjoy those 14 miles girl!
I like how you give the recipe grades : ) I’ve never had Red Velvet, I don’t think that’s quite my style.. but my mom has made it before and everyone loved it
Red velvet are handsdown my favorite cupcakes. They really make my heart sing! Can’t wait to see your droolworthy post!!
I was in a bidding war to do 100 red velvet cupcakes for this girl’s wedding who had randomly contacted me about it. I’m kind of glad I didn’t get it because I honestly am not a huge fan of red velvet and couldn’t even tell you what exactly makes it stand out above others…
I’ve never quite understood the big hooha around Red Velvet – it’s just chocolate-flavored cake with cream cheese frosting, right? Something is a little too debutante for me. And anyway, your trouble with it gives me even more reason to dislike it! But I’m sorry it wasn’t your best showing. For what it’s worth, I am fairly confident your coworkers didn’t notice a problem and loved that they existed.
Ah, Pen…these look so lovely. I don’t believe i have ever had red velvet cake or cupcakes…i hear about them all the time tho and always wondered what the distinct taste was..sounds so nice.
Cream cheese icing is my all time favorite. Theres nothing better!
Ew, the red grosses me out actually. I’ve heard of people using beet juice instead of dye, but they still are red. Cake should not be red.
I don’t like red velvet cupcakes! I don’t know what the craze is about…
Awwww Pen…..those are my favorite!!!!! They look really good despite your poor ranking, haha.
I am sure you are just being hard on yourself…they look amazing!!!
Oh pen..why must you “mess up” my fave cake of all time!!! Please redo it and then send me some? Thanks.
They look good, they can’t have been that tasteless. I’m sure I still would have eaten them.
ahhh i can’t get distracted while i’m baking otherwise i totally “lose my spot” as far as what i’ve added and what i haven’t. bad news bears.
they LOOk great, tho!!! what does the vinegar/fizzy combo accomplish??? i’m intrigued
hope the 14′er went well!! sounds far to me
