becoming a happy adult in a sunny sustainable world.
During tri season, I eat A LOT. And I normally eat a lot compared to the normal person anyway, so when I say it’s a lot…it’s a lot. And last season, I realied a lot on very processed pre, during, and post training food. One of my goals this year is to reduced the amount of processed foods I consume; training food included.
So, this weekend I went to task creating some pre-workout fuel. Let me introduce the Puffed Corn Trail Mix:
Mixed in a bowl: dried fruit and nut mix, extra raisins, dried unsweetened coconut, wheat germ, and puffed corn.
Warmed up about a cup of honey and poured over the mixture. Tossed the mixture to coat.
Spread the mixture out on a baking pan lined with parchment paper.
And baked for about 10 minutes.
One cup of the mixture has: 203 cal, 7.8g of fat (mostly from the coconut), 28.5g of carbs, 4g of protein. It tasted pretty good, except the parts that burned (oops….).
In other burned food/cooking news…I definitely set a fire in my kitchen today. Oopsies. (ps. Mommy, I’m fine, the kitchen is fine, the animals are fine). It was mostly just scary. But yea, don’t forget about the coconut that you are toasting in the oven…that is all.
Has anyone else ever tried to make a “sporty fuel” from scratch?

Oopsie, glad the fire wasn’t too serious. I haven’t gotten too adventurous in the “sports fuel” area. I keep meaning to attempt making my own Larabars…. I’ve heard its not that hard. I should probably just attempt making some granola first though.
ooohhhh… i’ve set the fire alarm off quite a few times. Never had actual flame, but we’ve been close.
And I’m actually looking for good recipes for protein/granola bars… been wanting to try them out!
Nice. The puffed corn looks like chickpeas almost.
I eat a lot more than other people too…i don’t understand and it bugs me a big. I just cannot be normal!
I’ve made some nutty granola that is similar “fuel” food. It just had oats in it too. Non-processed tastes so much better!
i keep meaning to make my own stuff but in a dorm it’s sooooo tough! great eats
This sounds good! Anything covered in honey would be good
I actually just made some energy/sports bars from scratch that I’m going to post in the near future!
Oh, yum! That looks like a delicious snack!!
Great combination of ingredients.
Haha you did not light your kitchen on fire. I eat a lot too, you’re not alone.
That looks awesome! No I probably should though….
Awesome Pen! That looks so good. I have made my own power bars before. They are really good!!
Protein Bars
Makes 8 bars @ 95 calories, 17 grams of protein, 4 net carbs, and 3 grams of fat each
Ingredients:
• 1 cup liquid egg whites or egg substitute
• 1/2 cup pure pumpkin
• 3/4 cup lowfat cottage cheese
• 100 grams of protein powder
• 1 cup wheat bran
• 1/2 tsp pure stevia
• 1 tsp each cinnamon and ginger
Directions:
1. Preheat oven to 350 degrees. Spray an 8 x 8 cake pan with baking spray, set aside.
2. Mix the egg whites, pumpkin, and cottage cheese until well combined. Stir in the rest of the ingredients.
3. Pour batter into cake pan.
4. Bake for about 30 minutes, or until a knife inserted into the center comes out clean.
I’ve made variations of these bars: http://www.backpacker.com/_trail_chef_trail_bars/blogs/daily_dirt/1204
You can pretty much put anything you want in them, substitute the oil with apple sauce and you’ve got yourself a tasty and healthy bar! i’ve taken these on hiking and overnight camping trips, and I’ve eatten them while running a few trail marathons and 50Ks. YUM!
So would you use that while you were training on the bike or running? Or is that more of a pre-workout or snack food? I ask because I think I’d probably choke to death if I tried to eat little crunchy bits of something while I was running.
My friend and I used to always make a delicious granola from rolled oats, nuts, dried fruit, all doused in apple juice and baked. Very yummy! Glad the fire wasn’t too bad
I like to think of my hunger as my “little friend” who’s with me all the time. This Ironman training is making my appetite enormous!
i’m going to try it with Uncle Sam’s cereal instead of the corn
Im not brave enough to try and make stuff like this. It looks awesome though!
