becoming a happy adult in a sunny sustainable world.
Welcome to the first installment of my Cupcake Project. You can read more about it in a later installment where I will define the rules of my project (because I like rules.) I’ll be sharing pictures, but because I’m cooking my way through Martha’s Cupcake Cookbook, and I’m a lawyer afraid of copyright infringement, I won’t be publishing the recipes. But, should you want to replicate these cupcakes, the recipe can be found on page 22 of Martha Stewart’s Cupcakes.
Note: If you like cupcakes, be sure to read ALL THE WAY to the bottom.
Without further ado, I bring you CUPPY #1: Choco Chip with Dark Choco Icing:
The beauty of baking as an adult? You get to eat the raw batter without getting scolded.
All golden, fluffy, and yummy.
Onward to the icing. Thank you Mr. New Handmixer, for without you, none of this could have been done.
It’s a good thing butter is sooooo delish.
As is loooots o’ choco and cocoa powder.
The FINISHED PRODUCT:
Which required a very serious scientific tasting process:

OK, here’s the best part…(for you guys)!!! I’m trying to figure out what I’m going to be doing with all of these cupcakes I’m making. And that’s where you, all my lovely readers, come in. Who wants to help me by eating some cupcakes? Starting in May (I’m giving myself time to figure out the logistics) I’ll start mailing out cupcakes!
Soooooooo.
If you like cupcakes. And you like me. Drop me an email (penelope@penatpeace.com) and tell me when your birthday is and your address…and get ready to be surprised (or not really surprised) by some bday-time cupcakes!
A public defender super heroine by day, I am a cupcake baker extraordinaire by night. And come weekend, I am an IronPerson. I deal with an NPR addiction daily and I dream of one day having Carl Kasell on my answering machine. I strive to be the best fur-mommy I can be, and when I have time, I'm learning to be a grownup.

I like to celebrate my half-birthday: April 19th. Just sayin’.
If only you could mail to Hong Kong…..I’m getting tired of pastries such a non-refrigerated cheesecakes!

My birthday is May 9th and I like chocolate

That frosting looks AMAZING! Too bad it wasn’t too chocolatey
omg…seriously? cupcakes? sent?
I am using my “regular” email as opposed to my blog email. I want in on this cupcake thing.
i’m cracking up about the “ex-baby mama” thing. jeez louise girl, i want cupcakes so badly now!! YUM
UMM….can you just send them to me…no birthday needed? I am loving this cupcake thing. BTW I usually take baked goods for my coworkers and stuff..maybe you can do that..or give them to the convicts…
Yes! This is awesome, I want some cupcakes! Totally emailing you my b-day and address.
mmmm those look yummy!! This is such a cute idea
I love baking I wish I was home and had a kitchen and I would totally join you in your cupcake project!
You are so cute! I’m sending you an email
Who doesn’t like cupcakes??
oooh i need a handmixer. are they expensive? i am guessing it is cheaper than a food processor, heh.
nice baking recap. i always appreciate step by step photos.
this is going to be quite the adventure! i like your rating system, too.
also, loved your use of carrots + b.squ. in the risotto! v. creative!
Good idea for distributing the cupcakes. I’d love to bake more, but I think my coworkers (who I would inevitably try to force feed with said baked goods) would get tired of it after a few batches of whatever.
You are too cute! Random…but you have perfect eyebrows! Don’t even ask why I noticed that. I am an eyebrow person and wax mine religiously…don’t ask…just something I notice!
Oh…and the cupcakes look devine! My b-day is in April so I will miss the cupcake mailouts…but I can invent a day! haha!
So it’s…about a day after you wrote this? I’m guessing you have gotten 70 cupcake requests. Because this is just too sweet. Sadly, my birthday JUST passed, or I would be number 71. (I also noticed your perfect eyebrows!)
I dont think theres much else to say other than YUM!!
what an adorable idea! so happy my birthday has already passed as I do not need cup cakes sitting around.
oh and i cannot control my empathy either. It’s kind of ridiculous.
I’ve made Martha’s chocolate chip cupcakes before…SOOOO GOOD. Love it. I made a chocolate chip frosting which worked well too.
